Angel Cookies

Ingredients

• 1 cup shortening
• 1 1/2 cups sugar
• 2 large eggs
• 1 teaspoon lemon extract
• 1 teaspoon vanilla extract
• 2 1/2 cups flour
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 1/4 cup sugar

Recipe

• 1 beat shortening and 1 1/2 cups sugar at medium speed until fluffy.
• 2 add eggs and extracts; beat until blended.
• 3 combine dry ingredients,gradually add to creamed mixture, beating well.
• 4 cover and chill at least 1 hour.
• 5 shape dough into 1-inch balls.
• 6 roll balls in 1/4 cup of sugar.
• 7 place on ungreased cookie sheets.
• 8 bake at 350° for 8-9 minutes, until barely golden.
• 9 let cool 2 minutes on sheets.
• 10 transfer to wire racks to completely cool.
