Bacon English Muffins

Total Time: 3 hrs Cook Time: 3 hrs

Ingredients

  • Servings: 10
  • 1 cup milk
  • 3 tablespoons butter
  • 1 egg
  • 1/2 teaspoon salt
  • 2 teaspoons sugar
  • 3 cups plain flour
  • 2 teaspoons dry yeast
  • 150 g bacon, diced
  • 2 tablespoons parmesan cheese, grated
  • cornmeal

Recipe

  • 1 place all ingredients, except bacon, cheese, and cornmeal, in the bread machine, in the order listed.
  • 2 start the dough cycle. when the machine beeps, add bacon and cheese.
  • 3 when the dough is finished, sprinkle cornmeal on the work area, and turn out dough.
  • 4 press the dough out into a 1/2 inch thinck rectangle. turn dough over so both sides are coated in cornmeal.
  • 5 using a large glass or large cookie cutter, cut into 10 rounds.
  • 6 place the muffins on a tray, cover, and leave to rise for about 20 minutes.
  • 7 heat an electric frypan, to medium-high, and cook the muffins for 5 minutes on each side. they should be golden brown when you turn them.
  • 8 split with a knife, and serve warm, or toasted.
