Bacon English Muffins

Ingredients

- 1 cup milk
- 3 tablespoons butter
- 1 egg
- 1/2 teaspoon salt
- 2 teaspoons sugar
- 3 cups plain flour
- 2 teaspoons dry yeast
- 150 g bacon, diced
- 2 tablespoons parmesan cheese, grated
- cornmeal
Recipe
- 1 place all ingredients, except bacon, cheese, and cornmeal, in the bread machine, in the order listed.
- 2 start the dough cycle. when the machine beeps, add bacon and cheese.
- 3 when the dough is finished, sprinkle cornmeal on the work area, and turn out dough.
- 4 press the dough out into a 1/2 inch thinck rectangle. turn dough over so both sides are coated in cornmeal.
- 5 using a large glass or large cookie cutter, cut into 10 rounds.
- 6 place the muffins on a tray, cover, and leave to rise for about 20 minutes.
- 7 heat an electric frypan, to medium-high, and cook the muffins for 5 minutes on each side. they should be golden brown when you turn them.
- 8 split with a knife, and serve warm, or toasted.
