Chips Ahoy Banana Muffins

Ingredients
- Servings: 12
- 20 chips ahoy real chocolate chip cookies, coarsely crushed,divided
- 2 medium ripe bananas
- 1 egg
- 1/2 cup milk
- 3 tablespoons vegetable oil
- 1 1/4 cups flour
- 1/3 cup firmly packed light brown sugar
- 1 tablespoon baking powder
Recipe
- 1 set aside 1/2 cup cookie crumbs for the topping.
- 2 mash bananas with fork in large bowl.
- 3 add egg, milk and oil; mix well.
- 4 stir in flour, sugar and baking powder just until moistened.
- 5 stir in remaining crushed cookies.
- 6 spoon mixture evenly into 12 medium muffin cups sprayed with cooking spray.
- 7 sprinkle each muffin with reserved crushed cookies.
- 8 bake at 400°f for 20 minutes or until toothpick inserted in centers come out clean.
