Chips Ahoy Banana Muffins

Total Time: 35 mins Preparation Time: 15 mins Cook Time: 20 mins

Ingredients

  • Servings: 12
  • 20 chips ahoy real chocolate chip cookies, coarsely crushed,divided
  • 2 medium ripe bananas
  • 1 egg
  • 1/2 cup milk
  • 3 tablespoons vegetable oil
  • 1 1/4 cups flour
  • 1/3 cup firmly packed light brown sugar
  • 1 tablespoon baking powder

Recipe

  • 1 set aside 1/2 cup cookie crumbs for the topping.
  • 2 mash bananas with fork in large bowl.
  • 3 add egg, milk and oil; mix well.
  • 4 stir in flour, sugar and baking powder just until moistened.
  • 5 stir in remaining crushed cookies.
  • 6 spoon mixture evenly into 12 medium muffin cups sprayed with cooking spray.
  • 7 sprinkle each muffin with reserved crushed cookies.
  • 8 bake at 400°f for 20 minutes or until toothpick inserted in centers come out clean.
