Coconut Sweets

Ingredients

- 3 ounces fat-free ricotta cheese
- 1/4 cup nonfat dry milk powder
- 5 tablespoons sugar
- 1/4 cup unsweetened dried shredded coconut
Recipe
- 1 grease an 8x8 inch square pan, set aside.
- 2 in a large, nonstick fry pan heat ricotta cheese on medium heat.
- 3 add milk powder and stir to mix thoroughly.
- 4 cook for 12 to 15 minutes until most of the liquid is evaporated.
- 5 stir frequently to avoid sticking or burning on the bottom.
- 6 add sugar and stir.
- 7 the ricotta cheese mixture will become liquid again.
- 8 cook for another 5 minutes, stirring occasionally.
- 9 add the coconut and mix thoroughly.
- 10 continue to cook for 3 to 5 minutes.
- 11 the mixture should be quite thick.
- 12 pour the mixture into the greased pan and press the mixture with a spatula.
- 13 cut into 1 x 1 inch diamond shapes.
- 14 the mixture sets as it cools.
- 15 cool completely before removing from the pan.
