Cranberry Pistachio Refrigerator Cookies

Ingredients

  • 2 1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 cup butter, softened
  • 1 cup sugar
  • 2 eggs
  • 1 1/2 teaspoons vanilla
  • 3/4 cup pistachio nut, chopped
  • 3/4 cup cranberries, dried

Recipe

  • 1 preheat oven to 375ºf (190ºc).
  • 2 combine flour, baking powder, baking soda and salt.
  • 3 cream butter, sugar, eggs and vanilla together thoroughly.
  • 4 add dry ingredinets gradually, mixing until smooth.
  • 5 stir in nuts and cranberries.
  • 6 shape dough into 2 rolls about 1 1/2 inches (4 cm) in diameter. wrap in waxed paper or plastic wrap and chill overnight.
  • 7 cut roll into 1/2 inch (5 mm) slices. place on cookie sheet.
  • 8 bake for 8-12 minutes or until light golden. cool 5 minutes on sheet, then transfer to rack and cool completely.
