Cottage Cheese Cookies

Ingredients

• 1 cup butter, softened
• 1 cup cream-style small curd cottage cheese
• 2 cups flour
• strawberry preserves

Recipe

• 1 cream together butter and cottage cheese. work in the flour and wrap dough in waxed paper. place in the refrigerator to harden.
• 2 when cold, roll in thin sheets and cut three inch squares. place a teaspoon of strawberry preserves in the center of each square and fold into a triangle, pressing edges together very firmly.
• 3 bake at 425° f for 15 minutes, or until crust is brown and crisp.
