Alfajores Ni Ria

Ingredients

• 3/4 cup butter, softened
• 1/2 cup sugar
• 2 egg yolks
• 1 egg, large
• 1 teaspoon vanilla
• 1/2 lemon, juice and zest of
• 2 1/2 cups cornstarch
• 1 cup all-purpose flour
• 1/2 teaspoon baking powder
• 1 (8 ounce) can caramels

Recipe

• 1 beat together butter and sugar until fluffy. add in egg and yolks, vanilla, lemon juice and zest.
• 2 sift together cornstarch, all purpose flour, and baking powder. combine with egg mixture. ball up and press slightly. chill for at least 1 hour.
• 3 make into small balls and press slightly onto the cookie sheet. bake at 375 degrees for 9-11 minutes. cool when done.
• 4 sandwich caramel between two pieces. serve.
