Cashew-date Drops

Ingredients
- 1 1/2 cups unsifted flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup butter
- 1/2 cup brown sugar
- 1/4 cup honey
- 1 egg
- 1 teaspoon vanilla
- 1 cup dates
- 1 1/3 cups cashews
Recipe
- 1 stir together flour, baking powder and salt; set aside.
- 2 cream together butter and brown sugar in bowl until light and fluffy, using electri mixer at medium speed. add honey, egg and vanilla, beating until blended.
- 3 stir dry ingredients into creamed mixture, mixing well. stir in dates. cover and chill in refrigerator at least 1 hour.
- 4 drop mixture by heaping teaspoonfuls into chopped cashews. roll lightly to coat. place, about 2 inches apart on greased baking sheets. flattened each cookie with bottom of drinking glass to 1/2 inch thick.
- 5 bake in 400°f oven for 10 minutes.
