Charred Pepper & Feta Dip

Ingredients
- Servings: 4
- 3 large red peppers
- 6 ounces feta cheese
- 2 tablespoons pine nuts, toasted
- 1 tablespoon olive oil
Recipe
- 1 cut peppers in thirds and remove seeds. place cut side down on cookie sheet. broil until skins are blackened and puffed. place peppers in a covered casserole and let stand for 10 minutes to steam. remove and peel.
- 2 place all ingredients in the food processor and blend. chill until ready to serve.
- 3 serve with crackers or fresh vegetables.
