Chocolate Mint Meltaways
Ingredients

- 1 1/2 cups mint chocolate chips
- 1 large egg yolk
- 3/4 cup butter, softened
- 1 1/4 cups flour, unbleached
- 1/2 cup confectioners' sugar, sifted
- 1/2 cup mint chocolate chips (use 1 10-oz bag of nestles mint-chocolate chips and divide into 1 cup and 1/2 cup.)
- 2 tablespoons almonds, toasted, chopped
- 1 1/2 tablespoons vegetable shortening
Recipe
- 1 cookies:
- 2 preheat oven to 350 degrees f.
- 3 melt over hot (not boiling) water, 1 cup of mint chocolate chips; stir until smooth.
- 4 set aside.
- 5 in a large bowl, combine butter, confectioners' sugar, and egg yolk.
- 6 beat until creamy.
- 7 add melted chips and flour; beat until well blended.
- 8 drop by heaping teaspoonfuls onto ungreased cookie sheets.
- 9 bake at 350 degrees f. for 8 to 10 minutes.
- 10 allow to stand for 3 minutes before removing from cookie sheets.
- 11 cool completely on wire racks.
- 12 glaze:
- 13 combine over hot (not boiling) water the remaining 1/2 cup of mint-chocolate chips and vegetable shortening.
- 14 stir until chips are melted and mixture is smooth.
- 15 drizzle each cookie with 1/2 t of the glaze; sprinkle with almonds.
- 16 chill until set.
- 17 stor in airtight container in the refrigerator.
