Chocolate Mint Pinwheels

Ingredients
- 1 1/2 cups mint chocolate chips (one 10-oz package of nestle toll house mint-chocolate morsels, divided.)
- 1 large egg
- 3/4 cup butter, softened
- 1 teaspoon vanilla extract
- 1/3 cup sugar
- 1/2 teaspoon salt
- 2 1/4 cups plain flour
Recipe
- 1 melt, over hot (not boiling) water, 1/2 cup mint-chocolate chips, stir until smooth.
- 2 cool to room temperature, set aside.
- 3 in a large bowl, combine butter and sugar; beat until creamy.
- 4 add egg and vanilla extract, blend well.
- 5 gradually beat in flour and salt.
- 6 place 1 cup of dough in a small bowl.
- 7 add melted chips; blend thoroughly.
- 8 shape into a ball, flatten, (mixture will appear curdled).
- 9 cover with plastic wrap.
- 10 shape remaining dough into ball; flatten.
- 11 cover with plastic wrap.
- 12 chill until firm, about 1 1/2 hours).
- 13 preheat oven to 375 degrees f.
- 14 between sheets of waxed paper, roll each ball of dough into a 13 x 9-inch rectangle.
- 15 remove top layers of waxed paper and invert the chocolate dough onto the plain dough.
- 16 peel off waxed paper.
- 17 starting from the long side, roll up jelly roll stype.
- 18 cut into 1/4-inch slices; place on ungreased cookie sheet.
- 19 bake at 375 degrees f. for 7 to 8 minutes.
- 20 cool completely on wire racks.
- 21 melt over hot, (not boiling), water remaining 1 cup of chips; stir until smooth.
- 22 spread flat side of cookie with 1/2 slightly rounded teaspoonful melted chocolate.
- 23 chill until set.
