Coconut Almond Granola

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • 5 cups old fashioned oats
  • 2/3 cup wheat germ
  • 1/4 cup ground flax seeds
  • 1 cup unsweetened dried shredded coconut
  • 3/4 cup chopped almonds
  • 1/2 teaspoon salt
  • 1 teaspoon almond extract
  • 1 1/4 teaspoons vanilla extract
  • 1/4 cup sugar
  • 2/3 cup honey
  • 1/2 cup canola oil
  • 1/2 cup coconut oil (i like nutiva organic coconut oil)
  • 1 tablespoon water

Recipe

  • 1 combine all ingredients in a large bowl and mix thoroughly.
  • 2 place on a cookie sheet or baking dish, no more than a half an inch deep. you will probably need to divide it up into two batches.
  • 3 bake on the middle rack in a 350 degree oven, for 20-30 minutes, checking and stirring every 5-10 minutes.
  • 4 cool slightly in the pan before transferring into a large bowl, stir every 10-15 minutes as it cools. it will get crunchy as it cools.
  • 5 store in an airtight container for up to 2 weeks.
  • 6 1 serving is 1/2 cup, serve with milk or over yogurt and fruit.
