Buttermilk Biscuits

Ingredients
- vegetable cooking spray
- 2 cups self-rising flour
- 1 tablespoon baking powder
- 1 tablespoon sugar
- 1/2 teaspoon sugar (optional)
- 1/2 cup vegetable shortening, cut into small pieces
- 2/3 cup buttermilk
- melted butter, for brushing (optional)
Recipe
- 1 preheat oven to 425.
- 2 lightly spray a large, heavy baking sheet.
- 3 in a large mixing bowl, stir together the flour, baking powder, sugar(optional), and salt.
- 4 cut in shortening until mixture resembles fine crumbs.
- 5 make a well in center and pour in the buttermilk.
- 6 combine the buttermilk and flour mixture until a sticky dough forms.
- 7 turn dough on a floured surface and knead lightly 4-5 times, just blended.
- 8 roll out the dough about 1/2-inch thick.
- 9 using a floured 2-inch biscuit or cookie cutter, cut the dough into as many rounds as possible using a straight downward motion.
- 10 do not twist the cutter or the sides of the biscuits will not rise evenly.
- 11 place rounds on the baking sheet about 1 inch apart.
- 12 if you want the biscuits with a very soft edge, place the close together on a baking sheet.
- 13 knead the dough trimmings together lightly, reroll, and cur out as before. bake for 10-12 minutes or until golden brown.
- 14 if you want brush the tops with a little melted butter and serve hot from the oven .
- 15 careful to keep an eye on them cooking times may very per stove.
