Chocolate Covered Cherry Cookies

Total Time: 27 mins Preparation Time: 15 mins Cook Time: 12 mins

Ingredients

  • 1 (10 ounce) jar maraschino cherries, with stems drained, juice reserved
  • 1 tablespoon cherry juice
  • 1/2 cup butter, softened
  • 1 cup sugar
  • 1/2 cup unsweetened cocoa
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1 egg, beaten
  • 1 1/2 cups all-purpose flour

Recipe

  • 1 in a medium bowl, beat butter with mixer on medium high speed for 30 seconds.
  • 2 add sugar, cocoa, baking soda and baking powder; beat until combined.
  • 3 add the beaten egg and 1 tablespoon reserved cherry juice; beat about 30 seconds.
  • 4 slowly beat in as much flour as you are able with the mixer and stir in any remaining flour with a wooden spoon.
  • 5 shape a scant teaspoon of dough around each cherry.
  • 6 place each in a 1 inch paper or foil baking cup.
  • 7 place 1 inch apart on ungreased cookie sheets.
  • 8 bake in a 350 degree oven for 10-12 minutes or until the top looks dry.
  • 9 after they have cooled, top with melted chocolate or your favorite chocolate glaze.
  • 10 top with sprinkles if desired.
