Chocolate Covered Cherry Cookies

Ingredients
- 1 (10 ounce) jar maraschino cherries, with stems drained, juice reserved
- 1 tablespoon cherry juice
- 1/2 cup butter, softened
- 1 cup sugar
- 1/2 cup unsweetened cocoa
- 1/4 teaspoon baking soda
- 1/4 teaspoon baking powder
- 1 egg, beaten
- 1 1/2 cups all-purpose flour
Recipe
- 1 in a medium bowl, beat butter with mixer on medium high speed for 30 seconds.
- 2 add sugar, cocoa, baking soda and baking powder; beat until combined.
- 3 add the beaten egg and 1 tablespoon reserved cherry juice; beat about 30 seconds.
- 4 slowly beat in as much flour as you are able with the mixer and stir in any remaining flour with a wooden spoon.
- 5 shape a scant teaspoon of dough around each cherry.
- 6 place each in a 1 inch paper or foil baking cup.
- 7 place 1 inch apart on ungreased cookie sheets.
- 8 bake in a 350 degree oven for 10-12 minutes or until the top looks dry.
- 9 after they have cooled, top with melted chocolate or your favorite chocolate glaze.
- 10 top with sprinkles if desired.
