Chocolate Crinkles (gluten-free)

Ingredients
- 1/2 cup vegetable oil
- 4 ounces dark chocolate
- 2 cups sugar
- 3 eggs, room temperature
- 2 teaspoons vanilla
- 1 1/2 cups rice flour (rice flour mix)
- 1 tablespoon rice flour (rice flour mix)
- 1/2 teaspoon xanthan gum
- 1/4 teaspoon salt
- 1 teaspoon baking powder
Recipe
- 1 melt chocolate, then mix with oil and sugar.
- 2 mix in eggs, one at a time. stir in the vanilla.
- 3 add rice flour mix, xanthan gum, salt and baking powder. mix everything together, then place bowl in the fridge for a few hours.
- 4 heat oven to 350°f form dough into small balls. place them on a greased cookie sheet (about 1.25" apart), and bake 10-12 minutes.
