Chocolate Crinkles (gluten-free)

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 1/2 cup vegetable oil
  • 4 ounces dark chocolate
  • 2 cups sugar
  • 3 eggs, room temperature
  • 2 teaspoons vanilla
  • 1 1/2 cups rice flour (rice flour mix)
  • 1 tablespoon rice flour (rice flour mix)
  • 1/2 teaspoon xanthan gum
  • 1/4 teaspoon salt
  • 1 teaspoon baking powder

Recipe

  • 1 melt chocolate, then mix with oil and sugar.
  • 2 mix in eggs, one at a time. stir in the vanilla.
  • 3 add rice flour mix, xanthan gum, salt and baking powder. mix everything together, then place bowl in the fridge for a few hours.
  • 4 heat oven to 350°f form dough into small balls. place them on a greased cookie sheet (about 1.25" apart), and bake 10-12 minutes.
