Coconut Balls (coquitos)

Ingredients

  • Servings: 4
  • 1 (18 ounce) can grated coconut in heavy syrup
  • 2 teaspoons brown sugar
  • 1 teaspoon vanilla extract
  • 1/2 cup sugar

Recipe

  • 1 drain syrup from coconut. reserve syrup.
  • 2 mix coconut, brown sugar, and vanilla in a medium size saucepan.
  • 3 cook over medium heat for a few minutes then allow to cool.
  • 4 make small balls on buttered cookie sheet and set aside.
  • 5 mix coconut syrup and sugar in small saucepan and cook over medium heat.
  • 6 stir frequently until it becomes dark brown.
  • 7 pour over balls and allow to cool.
