Coconut Balls (coquitos)

Ingredients
- Servings: 4
- 1 (18 ounce) can grated coconut in heavy syrup
- 2 teaspoons brown sugar
- 1 teaspoon vanilla extract
- 1/2 cup sugar
Recipe
- 1 drain syrup from coconut. reserve syrup.
- 2 mix coconut, brown sugar, and vanilla in a medium size saucepan.
- 3 cook over medium heat for a few minutes then allow to cool.
- 4 make small balls on buttered cookie sheet and set aside.
- 5 mix coconut syrup and sugar in small saucepan and cook over medium heat.
- 6 stir frequently until it becomes dark brown.
- 7 pour over balls and allow to cool.
