Amaretti Semifreddo

Total Time: 20 mins Preparation Time: 20 mins

Ingredients

  • 1/2 cup chopped blanched almond
  • 5 ounces amaretti cookies
  • 3 tablespoons dark rum
  • 3/4 cup semi-sweet chocolate chips
  • 1 cup heavy cream, chilled
  • 3 tablespoons brandy
  • 1 quart vanilla ice cream, softened

Recipe

  • 1 preheat oven to 350°f (175°c).
  • 2 place chopped almonds on a tray and toast in preheated oven until lightly colored and fragrant, 5 to 8 minutes. watch closely to prevent burning; if there is a strong odor of nuts in your kitchen, they'll be burnt by the time they cool. let cool completely.
  • 3 crumble the amaretti into 1/2 inch pieces by wrapping in a tea towel and tapping lightly with a rolling pin or mallet. do not crush into small pieces. place crumbled cookies in a medium bowl and sprinkle with rum. toss with almonds and chocolate chips. set aside.
  • 4 in a large bowl, beat cream with an electric mixer until thickened. pour in brandy and beat until soft peaks form. spoon whipped cream over cookie mixture. in same bowl, beat ice cream just until softened (with a flat whip, if available). fold cookie and cream mixture into ice cream. freeze until ready to serve.

Babka

  • 3 cups flour
  • 1/2 teaspoon salt
  • 2 tablespoons sugar
  • 1 teaspoon yeast (preferrably fast rising)
  • 8 tablespoons butter (1 stick)
  • 2/3 cup warm milk
  • 4 egg yolks
  • 1 cup raisins
  • 1 orange, zest of
  • 1/4 cup honey, warmed

Recipe

  • 1 layer all ingredients (except honey) in your bread machine using the order suggested by the manufacturer. process on the dough cycle.
  • 2 take the dough out of the pan. shape it as a round circle, put on a cookie sheet (covered with aluminium foil), cover and let rise, in a warm place, for 45 minutes to 1 hour (until doubled in size).
  • 3 preheat oven to 375°f bake your babka for 45-50 minutes.
  • 4 let cool for 5 minutes, brush with the warmed honey.
  • 5 when cold, slice and serve. this babka is even better after a couple of days.

Bark-b-que Dog Bones

Ingredients

  • 2 1/2 cups whole wheat flour
  • 1/2 cup cornmeal
  • 1/2 cup wheat germ
  • 1/2 cup barbecue sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 3 tablespoons corn oil
  • 1 egg
  • 1/2 cup water

Recipe

  • 1 preheat oven to 350*f.; combine dry ingredients.
  • 2 in a separate bowl, mix honey, oil, egg, water, and barbeque sauce; add to dry ingredients.
  • 3 roll dough to 1/4-inch thick, cut with cookie cutter of choice.
  • 4 place on ungreased cookie sheet and bake for 25 minutes.
  • 5 cool on wire rack.
  • 6 store in airtight container.

Butter Cookies

Ingredients

  • 1 cup butter, softened,no subs
  • 1/2 cup sugar
  • 1 egg
  • 1 teaspoon almond extract
  • 2 1/3 cups flour

Recipe

  • 1 cream butter; gradually add sugar and beat until light and fluffy.
  • 2 beat in egg and almond ext.
  • 3 gradually blend in flour.
  • 4 roll out on floured surface; cut with cookie cutters.
  • 5 place on ungreased cookie sheets.
  • 6 bake at 350* for 8 minutes.
  • 7 remove at once to wire rack.

Chocolate Marshmallow Cookies

Ingredients

  • 1 3/4 cups cake flour, sifted
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking soda
  • 1/2 cup cocoa
  • 1/2 cup shortening
  • 1 cup sugar
  • 1 egg
  • 1/2 cup milk
  • 1/2 cup pecans, chopped
  • 1 teaspoon vanilla
  • 36 marshmallows, halved
  • pecan halves
  • 2 cups powdered sugar
  • 5 tablespoons cocoa
  • 1 dash salt
  • 3 tablespoons butter, melted
  • 4 tablespoons light cream
  • 1/2 teaspoon vanilla

Recipe

  • 1 sift flour; measure, and sift again with soda, salt, and cocoa. cream shortening, adding sugar gradually and blending thoroughly. add eggs and beat. add flour mixture and milk alternately, beating after each addition. add chopped nuts and vanilla; mix. drop by level tespoonfuls about 2" apart on a greased cookie sheet. bake at 350* for 8 minutes. top with marshmallow halves, cut side down. return to oven and bake 2 minutes until marshmallow softens. cool. frost with cocoa frosting (mix powdered sugar, cocoa, salt, butter, cream and vanilla. blend until smooth.) and top each cookie with a pecan half.

Almond-coconut Bliss Bars

Ingredients

  • 3/4 cup shredded coconut
  • 1 (17 1/2 ounce) package oatmeal cookie mix (betty crocker)
  • 1/2 cup butter, melted
  • 1/3 cup sliced almonds
  • 1/4 cup miniature semisweet chocolate chips
  • 1 cup sweetened condensed milk (not evaporated)

Recipe

  • 1 heat oven to 350°f spread coconut in ungreased shallow pan. bake uncovered 5 to 7 minutes, stirring occasionally, until golden brown.
  • 2 in medium bowl, stir together cookie mix and melted butter. press in bottom of 13x9-inch pan. sprinkle chopped candy bars over crust. top with toasted coconut, almonds and chocolate chips. drizzle with condensed milk.
  • 3 bake 20 to 25 minutes or until golden brown. cool completely on cooling rack. cut into 4 rows by 4 rows.

  • 1 1/4 cups crushed cream-filled chocolate sandwich cookies
  • 1/4 cup butter, melted
  • 2 tablespoons sugar
  • 1 (8 ounce) package cream cheese, softened
  • 1 (3 ounce) package cream cheese, softened
  • 1/2 cup chocolate syrup
  • 1 1/3 cups semi-sweet chocolate chips, melted
  • 1 (8 ounce) carton frozen whipped topping, thawed
  • 2 cups miniature marshmallows

Recipe

  • 1 in a bowl, combine the cookie crumbs, butter and sugar. press onto the bottom and up the sides of a 9 inch pie plate. bake at 375 for 8-10 minutes or until set; cool completely on a wire rack.
  • 2 in a mixing bowl, beat cream cheese and chocolate syrup until blended. beat in melted chips. set aside 1/4 celsius of whipped topping into chocolate mixture. spoon into crust. refrigerate for at least 8 hours or overnight. garnish with reserved whipped topping and chocolate curls if desired.
