Christmas Fruit Bars

Ingredients

  • Servings: 20
  • 2 eggs
  • 1 cup icing sugar
  • 1/4 cup melted butter
  • 3/4 cup flour
  • 1 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 cup chopped walnuts
  • 1 cup chopped dates
  • 3/4 cup mixed candied fruit
  • 1/4 cup softened butter
  • 1 cup icing sugar

Recipe

  • 1 in a large bowl and using electric mixer beat eggs with 1c icing sugar until light and fluffy.
  • 2 stir in 1/4c melted butter.
  • 3 whisk together flour, baking powder and salt and stir into egg mixture.
  • 4 stir in walnuts, dates and candied fruit.
  • 5 spread in greased 8" square cake pan.
  • 6 bake in centre of 350 oven for 30-35 minutes or until top is golden and firm to the touch.
  • 7 let cool in pan on rack.
  • 8 to make the icing:in bowl beat 1/4c butter until light.
  • 9 gradually add 1c icing sugar until fluffy.
  • 10 spread over top of cooled bars.
