Brandied Chicken And Cheese

Total Time: 25 mins Preparation Time: 5 mins Cook Time: 20 mins

Ingredients

  • 5 chicken tenderloins or 5 boneless skinless chicken breasts
  • 1 dash salt
  • 1 dash pepper
  • all-purpose flour, enough to coat chicken
  • 1/4 cup butter
  • 1/4 cup chicken broth
  • 1/4 cup brandy
  • 1/8 cup berry juice (like raspberries or blackberries, optional) (optional) or 1/8 cup pureed berries (like raspberries or blackberries) (optional)
  • cheddar cheese or provolone cheese, sliced

Recipe

  • 1 lay chicken on a plate or cookie sheet, sprinkle salt and pepper on chicken.
  • 2 put the flour in a bowl and toss the chicken pieces in it individually to coat them.
  • 3 melt butter in a small frying pan over medium heat.
  • 4 place the chicken in the pan and cook until its golden brown on both sides.
  • 5 while the chicken is browning, mix the chicken broth, brandy, and berry juice.
  • 6 when the chicken is golden brown on both sides, pour the broth mixture into the pan.
  • 7 let the chicken cook uncovered until almost all the liquid is gone.
  • 8 remove the pan from the heat and place the cheese slices on the chicken. cover it and let it sit for 5 minutes.
  • 9 once the cheese is melted, remove the chicken from the pan and serve as hot as possible.
