Chocolate Chunk Cherry Scones

Total Time: 20 mins Preparation Time: 5 mins Cook Time: 15 mins

Ingredients

  • Servings: 8
  • 2 1/2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1/3 cup sugar
  • 1/2 teaspoon salt
  • 5 tablespoons cold butter
  • 2 eggs
  • 1 cup whipping cream
  • 1 teaspoon vanilla
  • 1/2 cup semisweet chocolate chunk
  • 1/2 cup dried cherries
  • 1 teaspoon water

Recipe

  • 1 heat oven to 400.
  • 2 grease cookie sheet with cooking spray.
  • 3 in large bowl, mix flour, baking powder, sugar and salt.
  • 4 cut in butter using pastry blender or fork until mixture forms coarse crumbs.
  • 5 in medium bowl, beat 1 of the eggs with a fork.
  • 6 stir in whipping cream and vanilla.
  • 7 stir in chocolate chunks and cherries until combined.
  • 8 pour over crumb mixture.
  • 9 stir until just moistened-do not over-mix.
  • 10 place dough on lightly floured surface.
  • 11 knead lightly 4 times.
  • 12 pat into 7in circle about 1 inch thick.
  • 13 transfer to cookie sheet.
  • 14 in a small bowl, beat remaining egg.
  • 15 stir in water.
  • 16 brush mixture lightly over top of dough.
  • 17 discard any remaining mixture.
  • 18 cut into 8 wedges.
  • 19 separate slightly so wedges aren't touching.
  • 20 bake 15-20 minutes or toothpick comes out clean.
  • 21 remove to cooling rack.
  • 22 cool 10 minutes.
  • 23 serve warm.
