Chocolate Chunk Cherry Scones

Ingredients

- 2 1/2 cups all-purpose flour
- 2 teaspoons baking powder
- 1/3 cup sugar
- 1/2 teaspoon salt
- 5 tablespoons cold butter
- 2 eggs
- 1 cup whipping cream
- 1 teaspoon vanilla
- 1/2 cup semisweet chocolate chunk
- 1/2 cup dried cherries
- 1 teaspoon water
Recipe
- 1 heat oven to 400.
- 2 grease cookie sheet with cooking spray.
- 3 in large bowl, mix flour, baking powder, sugar and salt.
- 4 cut in butter using pastry blender or fork until mixture forms coarse crumbs.
- 5 in medium bowl, beat 1 of the eggs with a fork.
- 6 stir in whipping cream and vanilla.
- 7 stir in chocolate chunks and cherries until combined.
- 8 pour over crumb mixture.
- 9 stir until just moistened-do not over-mix.
- 10 place dough on lightly floured surface.
- 11 knead lightly 4 times.
- 12 pat into 7in circle about 1 inch thick.
- 13 transfer to cookie sheet.
- 14 in a small bowl, beat remaining egg.
- 15 stir in water.
- 16 brush mixture lightly over top of dough.
- 17 discard any remaining mixture.
- 18 cut into 8 wedges.
- 19 separate slightly so wedges aren't touching.
- 20 bake 15-20 minutes or toothpick comes out clean.
- 21 remove to cooling rack.
- 22 cool 10 minutes.
- 23 serve warm.
