Basil Cheese Triangles

Ingredients
- 1 lb feta or 1 lb shredded monterey jack cheese
- 2 eggs, slightly beaten
- 1/4 cup finely chopped fresh basil leaf
- 1/4 teaspoon pepper
- 1 (16 ounce) package frozen phyllo pastry sheets, thawed
- 1/3 cup butter or 1/3 cup margarine, melted
Recipe
- 1 heat oven to 400 degrees.
- 2 grease cookie sheet.
- 3 crumble feta cheese into small bowlm mash with fork.
- 4 stir in eggs, basil, and pepper until well mixed.
- 5 cut stack of phyllo sheets lengthwise into 2-inch strips.
- 6 cover with plastic wrap, then with damp towel to prevent them from drying out.
- 7 place 1 level teaspoon cheese mixture on end of 1 strip, fold phyllo strip end over end, in triangular shape, to opposite end.
- 8 place on cookie sheet.
- 9 repeat with remaining strips and cheese mixture.
- 10 brush butter over triangles.
- 11 bake 12 to 15 minutes or until puffed and golden.
- 12 serve warm.
