Cinnamon-ginger Cookies

Ingredients
- 1 2/3 cups unbleached all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon cinnamon
- 3/4 teaspoon ground ginger
- 1/2 teaspoon freshly grated nutmeg
- 1/4 teaspoon ground cloves
- 1/4 teaspoon ground cardamom
- 1/4 teaspoon salt
- 1/8 teaspoon fresh ground black pepper
- 1 cup unsalted butter, softened
- 1/3 cup packed dark brown sugar
- 1/4 cup pure maple syrup
- 1 tablespoon vanilla-flavored soymilk or 1 tablespoon heavy cream
- granulated sugar, for rolling
Recipe
- 1 preheat the oven to 350° and position 2 racks in the upper and lower thirds of the oven. line 2 baking sheets with parchment paper.
