Cinnamon-sugar Biscotti

Ingredients

- 2 cups all-purpose flour
- 2 1/2 teaspoons ground cinnamon
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup sugar, plus
- 3 tablespoons sugar
- 6 tablespoons unsalted butter, room temperature
- 2 large eggs
- 1 large egg yolk
- 1 teaspoon vanilla extract
Recipe
- 1 preheat oven to 325°f line 2 large baking sheets with parchment paper.
- 2 mix flour, 1 1/2 teaspoons cinnamon, baking powder and salt in medium bowl to blend.
- 3 using electric mixer, beat 1 cup sugar and butter in large bowl until fluffy.
- 4 add 1 egg; beat well.
- 5 add egg yolk; beat well.
- 6 mix in vanilla, then dry ingredients.
- 7 transfer dough to work surface.
- 8 divide in half.
- 9 shape each half into 9-inch-long, 1 1/2-inch-wide log.
- 10 transfer logs to baking sheets.
- 11 beat remaining egg in small bowl.
- 12 brush logs with egg.
- 13 bake until golden and firm to touch (dough will spread), about 50 minutes.
- 14 cool on baking sheets.
- 15 maintain oven temperature.
- 16 mix 3 tablespoons sugar and 1 teaspoon cinnamon in small bowl to blend.
- 17 using serrated knife, cut logs into 1/2-inch-wide diagonal slices.
- 18 place biscotti, cut side down, on baking sheets.
- 19 sprinkle 1/4 teaspoon cinnamon sugar over each biscotti.
- 20 bake until pale golden, about 20 minutes.
- 21 cool on racks.
- 22 (can be made 1 week ahead. store in airtight container.).
