Cranberry Blondies

Total Time: 1 hr Preparation Time: 15 mins Cook Time: 45 mins

Ingredients

  • Servings: 24
  • 2/3 cup butter
  • 2 cups brown sugar, packed
  • 3 eggs
  • 2 teaspoons vanilla
  • 1 cup flour
  • 1 cup rolled oats
  • 2 1/2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cups chocolate chips
  • 1 cup coconut
  • 1 1/2 cups chopped pecans
  • 2 cups fresh cranberries, chopped

Recipe

  • 1 spray 9 x 13 pan with nonstick spray, and preheat oven to 375°f.
  • 2 cream butter and add brown sugar gradually.
  • 3 add eggs one at a time, beating constantly.
  • 4 add vanilla, mix well.
  • 5 sift together flour, oats, baking powder and salt.
  • 6 add a little at a time to the wet mixture.
  • 7 mix in chips, coconut, nuts and cranberries.
  • 8 press into prepared pan and bake for 40-45 minutes.
  • 9 cool before cutting.
