Breakfast Loaf

Total Time: 45 mins Preparation Time: 15 mins Cook Time: 30 mins

Ingredients

  • Servings: 8
  • 1 loaf round bread, 8 inches in diameter
  • 4 slices bacon
  • 1/2 red bell pepper, thinly sliced
  • 6 eggs, scrambled
  • 2 tablespoons grated parmesan cheese
  • 2 ounces sliced black olives
  • 1 medium tomato, thinly sliced
  • 1/2 cup shredded cheddar cheese
  • 4 ounces mushrooms, sliced and cooked

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 slice the top off of the bread loaf; set aside for lid.
  • 3 remove interior of the loaf, leaving 1" on all sides and bottom.
  • 4 layer the following inside the loaf: bacon, red pepper, eggs, sprinkled with parmesan cheese, black olives, tomato, cheese, and mushrooms.
  • 5 replace the lid and wrap the entire loaf in aluminum foil.
  • 6 place on a cookie sheet.
  • 7 bake about 30 minutes or until heated throughout.
  • 8 cut into 8 wedges.
