Chewy Coconut Cherry Bars

Ingredients

- 1 cup flour
- 1 teaspoon baking soda
- 1 cup brown sugar
- 1 cup rolled oats
- 1/2 cup shortening, i use crisco
- 2 eggs
- 1 cup brown sugar
- 1/2 teaspoon almond extract
- 2 tablespoons flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 1 cup coconut
- 1 cup maraschino cherry, drained and chopped
- 1/2 cup pecans, chopped
- 1/4 cup shortening, soft
- 2 cups icing sugar
- 1/2 teaspoon almond extract
- 3 -4 tablespoons milk
Recipe
- 1 preheat oven to 350*.
- 2 combine flour, baking soda, oats and brown sugar.
- 3 cut in shortening until crumbly.
- 4 press into a 9 x 13 pan, and bake for 10 minutes.
- 5 beat eggs, brown sugar and almond extract thoroughly.
- 6 in a separate cup, mix together the flour, baking powder and salt.
- 7 add to the egg/sugar mixture and blend well.
- 8 stir in the coconut, cherries and pecans.
- 9 spread evenly over crust.
- 10 bake for 25 minutes or until lightly brown.
- 11 cool completely before icing.
- 12 beat all icing ingredients together until smooth and creamy.
- 13 spread or over the baked mixture.
- 14 cut into squares.
