Chewy Cranberry Chips Cookies

Ingredients
- 10 tablespoons unsalted butter
- 4 ounces neufchatel cheese
- 3/4 cup dark brown sugar
- 1/2 cup sugar
- 1/2 teaspoon salt
- 1 3/4 cups all-purpose flour or 1 3/4 cups whole wheat
- 1/2 teaspoon baking soda
- 1/4 teaspoon nutmeg, fresh grated
- 1/2 teaspoon ground ginger
- 1 egg, whole
- 1 egg yolk
- 1 teaspoon vanilla
- 1 cup dried cranberries
- 1 teaspoon orange zest
- 1/2 cup vanilla baking chips
- 3/4 cup semi-sweet chocolate chips
- 1 tablespoon candied ginger, chopped (optional)
Recipe
- 1 preheat oven to 375 degrees.
- 2 heat butter in a pan till lightly browned and has a nutty fragrance.
- 3 whisk in cheese and sugars and salt. let sit while stirring flour, baking soda, nutmeg and ginger together. give a stir to the butter mixture let sit again while placing parchment paper on three large cookie sheet pans. fyi letting the sugars sit in the butter/ cheese mixture helps dissolve the sugars, making a delicious chewy cookie.
- 4 whisk in whole egg, yolk and vanilla.
- 5 stir in the flour mixture to combine then stir in the chips, orange zest and cranberries. and optional candied ginger if you like.
- 6 place 8 cookies per sheet pan.
- 7 bake 12-14 minutes.
- 8 remove from oven and let rest 1-2 minutes.
- 9 remove and let cool on wire racks.
