Cherry-chocolate Cookies

Total Time: 23 mins Preparation Time: 15 mins Cook Time: 8 mins

Ingredients

  • 2/3 cup softened butter
  • 3/4 cup sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • 1 2/3 cups flour
  • 6 tablespoons cocoa
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/8 teaspoon salt
  • 36 maraschino cherries, halves
  • 2 tablespoons sugar
  • 2 tablespoons water
  • 1/2 cup semi-sweet chocolate chips

Recipe

  • 1 preheat oven to 350 degrees.
  • 2 cream butter, 3/4 cup sugar, egg, and vanilla in bowl until light and fluffy.
  • 3 add mixture of flour, cocoa, baking powder, baking soda and salt; mix well.
  • 4 shape into 1 inch balls.
  • 5 place 1 inch apart on ungreased cookie sheets.
  • 6 press cherry half into center of each cookie.
  • 7 bake at 350 degrees for 8 minutes or until almost set.
  • 8 cool on wire rack.
  • 9 combine 2 tablespoons sugar and 2 tablespoons water in saucepan.
  • 10 cook over medium heat until sugar dissolves.
  • 11 remove from heat and add chocolate chips.
  • 12 stir until chocolate melts.
  • 13 frost tops of cookies, leaving cherries unfrosted.
