Cinnamon Star Cookies

Ingredients

• 10 egg whites
• 1 kg icing sugar
• 1250 g almond powder
• 10 g cinnamon
• 360 g icing sugar
• 2 egg whites

Recipe

• 1 preheat oven 180°c.
• 2 for the dough:.
• 3 mix all the ingredients together, and chill for one hour.
• 4 roll the dough out, using 2 pieces of parchment paper, and flatten out, into a big square about a half inch thick.
• 5 remove the top parchment paper.
• 6 for the icing:.
• 7 whip together icing sugar and egg together for about 10 minutes, till you get a stiff melted marshmallow like froth. using a spatula, spread a layer of icing on top of the flattened cookie dough. cut the cookies out with a star cookie cutter and place on a baking tray.
• 8 bake in oven until the icing becomes dry, about 10 -15 minutes.
