Cinnamon Stars

Ingredients
- 3 egg whites
- 250 g sugar (1 1/4 cups)
- 9 g oetker vanilla sugar (1 pkg)
- 4 -8 g cinnamon (1-2 tsp)
- 350 g ground almonds (3 1/2 cups)
- icing sugar
Recipe
- 1 preheat oven to 300°f.
- 2 grease a cookie sheet.
- 3 beat egg whites until they form soft peaks.
- 4 gradually add the sugar and vanilla sugar, beating until they form stiff peaks.
- 5 set aside 50 ml (1/4 cup) of the egg mixture.
- 6 fold cinnamon and almonds into remaining mixture.
- 7 work all ingredients together quickly to make a smooth dough.
- 8 roll out the dough on a surface that has been dusted with icing sugar to a thickness of 6 mm (1/4 inch).
- 9 cut out stars with a cookie cutter, rinsing it frequently with hot water.
- 10 brush the reserved egg mixture on the stars.
- 11 place stars on the prepared cookie sheet.
- 12 bake on the middle rack for 20 minutes.
