Coconut Lime Thai Snowballs

Total Time: 30 mins Preparation Time: 15 mins Cook Time: 15 mins

Ingredients

  • 1 cup unsalted butter, softened
  • cookie
  • 1 cup confectioners' sugar
  • 1 teaspoon pure lime oil (or 2 t. lime juice)
  • 1 1/2 teaspoons finely grated lime zest
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup unsweetened dried shredded coconut
  • 1 cup unsweeteded shredded coconut
  • 1 cup confectioners' sugar, sifted
  • 1 1/2 teaspoons finely grated lime zest
  • 2 tablespoons cornstarch, sifted

Recipe

  • 1 preheat oven to 350 with racks in the upper and lower thirds.
  • 2 combine butter and sugar and beat until light and fluffy.
  • 3 add lime oil; beat to combine.
  • 4 gently fold in lime zest, salt, flour and coconut. blend well.
  • 5 lightly flour hands and roll dough into small,about 1-inch, balls and place about 1 1/2" apart on an ungreased baking sheet.
  • 6 bake until puffy (not browned)and bottoms are just golden, about 15 minute.
  • 7 meanwhile, combine coating ingredients in a gallon size plastic bag. while cookies are still warm, toss them in the coating.
  • 8 remove and transfer to wire rack to cool completely.
