Butter Mint Pats

Total Time: 1 hr 5 mins Preparation Time: 15 mins Cook Time: 50 mins

Ingredients

  • 1 cup butter, softened (do not use margarine)
  • 1 cup butter mints, crushed (yellow mints "richardson butter mints"(made with real butter, comes in a 5.5 ounce box)
  • 2 cups flour
  • 1 tablespoon granulated sugar

Recipe

  • 1 cream butter in large mixer bowl until light; add crushed mints.
  • 2 add flour; blend well at low speed with mixer, or by hand.
  • 3 chill dough for 1/2 hour.
  • 4 roll out or pat dough into a 9-inch square on waxed paper.
  • 5 sprinkle with sugar.
  • 6 cut into 1 1/2-inch squares.
  • 7 using tiny cookie cutter, press a design on each square.
  • 8 place on ungreased cookie sheets.
  • 9 bake at 350 degrees for 18-20 minutes, or until the cookies are set and just starting to turn pale golden (not browned). do not overbake.
  • 10 (note: cook time includes chill time of 1/2 hour.).
  • 11 (note: to crush mints place in heavy plastic bag and crush with a rolling pin- or, use your processor.).
