Cranberry Pistachio Refrigerator Cookies

Ingredients
- 2 1/2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup butter, softened
- 1 cup sugar
- 2 eggs
- 1 1/2 teaspoons vanilla
- 3/4 cup pistachio nut, chopped
- 3/4 cup cranberries, dried
Recipe
- 1 preheat oven to 375ºf (190ºc).
- 2 combine flour, baking powder, baking soda and salt.
- 3 cream butter, sugar, eggs and vanilla together thoroughly.
- 4 add dry ingredinets gradually, mixing until smooth.
- 5 stir in nuts and cranberries.
- 6 shape dough into 2 rolls about 1 1/2 inches (4 cm) in diameter. wrap in waxed paper or plastic wrap and chill overnight.
- 7 cut roll into 1/2 inch (5 mm) slices. place on cookie sheet.
- 8 bake for 8-12 minutes or until light golden. cool 5 minutes on sheet, then transfer to rack and cool completely.
