Christmas Fruit Bars

Ingredients

- 2 eggs
- 1 cup icing sugar
- 1/4 cup melted butter
- 3/4 cup flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup chopped walnuts
- 1 cup chopped dates
- 3/4 cup mixed candied fruit
- 1/4 cup softened butter
- 1 cup icing sugar
Recipe
- 1 in a large bowl and using electric mixer beat eggs with 1c icing sugar until light and fluffy.
- 2 stir in 1/4c melted butter.
- 3 whisk together flour, baking powder and salt and stir into egg mixture.
- 4 stir in walnuts, dates and candied fruit.
- 5 spread in greased 8" square cake pan.
- 6 bake in centre of 350 oven for 30-35 minutes or until top is golden and firm to the touch.
- 7 let cool in pan on rack.
- 8 to make the icing:in bowl beat 1/4c butter until light.
- 9 gradually add 1c icing sugar until fluffy.
- 10 spread over top of cooled bars.
