Butter-pecan Cookies

Ingredients
- 1 cup butter, softened (no substitutions)
- 3/4 cup sugar
- 3/4 cup firmly-packed brown sugar
- 2 eggs
- 1 teaspoon vanilla or 1 teaspoon maple extract
- 2 1/4 cups flour
- 1 teaspoon baking soda
- 1/8 teaspoon salt
- 1 cup chopped pecans (can use a little more)
Recipe
- 1 set oven to 375 degrees.
- 2 in a bowl, cream butter with sugars, until light and fluffy.
- 3 beat in eggs and vanilla.
- 4 combine dry ingredients; add to creamed mixture; mix well.
- 5 add in chopped pecans.
- 6 drop dough by teaspoons onto an ungreased cookie sheet.
- 7 bake for 10 minutes, or until lightly browned (don't overbake).
