Chocolate Chip Tofookie

Total Time: 25 mins Preparation Time: 15 mins Cook Time: 10 mins

Ingredients

  • 2 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup margarine
  • 1/2 cup shortening
  • 1 1/2 cups brown sugar, firmly packed
  • 2 teaspoons vanilla
  • 1/2 cup silken tofu, whipped
  • 1 (12 ounce) package semisweet vegan chocolate chips

Recipe

  • 1 preheat oven to 375°f.
  • 2 in a medium bowl, mix flour, baking powder and salt. set aside.
  • 3 in a separate large mixing bowl, beat together margarine and shortening with mixer until creamy and smooth.
  • 4 add vanilla and brown sugar, and beat until smooth.
  • 5 add whipped tofu and beat until well-blended.
  • 6 continue beating while adding flour mixture until a big ball of smooth batter forms.
  • 7 mix in chocolate chips with a wooden spoon.
  • 8 drop batter with a tablespoon onto cookie sheet, about two inches apart.
  • 9 bake 8-10 minutes until cookies begin to brown lightly.
  • 10 cool on cookie sheet 5 minutes before moving to cooling rack.
