Chocolate Chip Tofookie

Ingredients
- 2 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 cup margarine
- 1/2 cup shortening
- 1 1/2 cups brown sugar, firmly packed
- 2 teaspoons vanilla
- 1/2 cup silken tofu, whipped
- 1 (12 ounce) package semisweet vegan chocolate chips
Recipe
- 1 preheat oven to 375°f.
- 2 in a medium bowl, mix flour, baking powder and salt. set aside.
- 3 in a separate large mixing bowl, beat together margarine and shortening with mixer until creamy and smooth.
- 4 add vanilla and brown sugar, and beat until smooth.
- 5 add whipped tofu and beat until well-blended.
- 6 continue beating while adding flour mixture until a big ball of smooth batter forms.
- 7 mix in chocolate chips with a wooden spoon.
- 8 drop batter with a tablespoon onto cookie sheet, about two inches apart.
- 9 bake 8-10 minutes until cookies begin to brown lightly.
- 10 cool on cookie sheet 5 minutes before moving to cooling rack.
