Coconut Sweets

Total Time: 40 mins Preparation Time: 15 mins Cook Time: 25 mins

Ingredients

  • Servings: 16
  • 3 ounces fat-free ricotta cheese
  • 1/4 cup nonfat dry milk powder
  • 5 tablespoons sugar
  • 1/4 cup unsweetened dried shredded coconut

Recipe

  • 1 grease an 8x8 inch square pan, set aside.
  • 2 in a large, nonstick fry pan heat ricotta cheese on medium heat.
  • 3 add milk powder and stir to mix thoroughly.
  • 4 cook for 12 to 15 minutes until most of the liquid is evaporated.
  • 5 stir frequently to avoid sticking or burning on the bottom.
  • 6 add sugar and stir.
  • 7 the ricotta cheese mixture will become liquid again.
  • 8 cook for another 5 minutes, stirring occasionally.
  • 9 add the coconut and mix thoroughly.
  • 10 continue to cook for 3 to 5 minutes.
  • 11 the mixture should be quite thick.
  • 12 pour the mixture into the greased pan and press the mixture with a spatula.
  • 13 cut into 1 x 1 inch diamond shapes.
  • 14 the mixture sets as it cools.
  • 15 cool completely before removing from the pan.
