Cornish Game Hens With Orange Sauce

Total Time: 1 hr 25 mins Preparation Time: 10 mins Cook Time: 1 hr 15 mins

Ingredients

  • Servings: 4
  • 4 cornish hens, thawed, rinsed and patted dry
  • 4 oranges
  • salt
  • pepper
  • parsley
  • cornstarch

Recipe

  • 1 preheat oven to 500°f.
  • 2 prepare hens by rubbing mixture of salt and pepper into skin liberally.
  • 3 place on cookie sheet, breast side up.
  • 4 roast for 15 minutes at 500°f.
  • 5 remove from oven and turn breast down; pour 1 1/2 cups water over hens.
  • 6 turn oven down to 425°f and continue to cook for 1/2 hour.
  • 7 meanwhile, use a zester to obtain orange peel without cutting into pith of fruit.
  • 8 slice oranges in half and squeeze juice.
  • 9 place juice in saucepan with zest and heat thoroughly (do not boil).
  • 10 remove hens from oven and turn breast-side up and continue cooking for additional 1/2 hour (total cooking time is 1 hour 15 minutes).
  • 11 blend cornstarch with orange juice/zest mixture and heat to thicken, stirring constantly.
  • 12 to serve: place hen on plate and pour sauce over. sprinkle with additional orange zest and parsley.
