Cranberry-orange Bars

Ingredients

  • Servings: 24
  • 1 cup finely chopped cranberries
  • 2 oranges, ground skins and pulp
  • 1/2 cup raisins, dark or 1/2 cup golden raisin
  • 1/4 cup brown sugar
  • 1/3 cup margarine
  • 2 eggs
  • 1 teaspoon vanilla
  • 1 cup whole wheat flour
  • 1 cup unbleached flour
  • 2 teaspoons baking powder

Recipe

  • 1 * substitutions = 2 cups whole fresh or frozen berries instead of 1 cup chopped.
  • 2 ** substitutions = 2 t fructose instead of brown sugar
  • 3 combine the cranberriess, oranges, raisins and brown sugar in a mixing bowl. set aside. cream margarine until light and fluffy. add 1 egg at a time and beat well. blend in vanilla. gradually add the flours and baking powder to the creamed mixture. stir in the cranberry mixture and pour the batter into a greased 13-x-9-inch baking pan.
  • 4 bake in a 350 f oven for 30 to 40 minutes, or until browned on top. cool in the pan on a wire rack. cut into 24 bars.
