Coconut Bars

Total Time: 1 hr Preparation Time: 20 mins Cook Time: 40 mins

Ingredients

  • Servings: 24
  • cooking spray
  • 1 (18 1/2 ounce) package cake mix
  • 1/4 cup butter or 1/4 cup margarine, softened
  • 1/4 cup coconut
  • 1/4 cup chopped pecans
  • 2 eggs
  • 1 (14 ounce) can sweetened condensed milk
  • 1 egg
  • 1 teaspoon vanilla
  • 1 1/3 cups coconut, divided
  • 1 cup chopped pecans

Recipe

  • 1 preheat oven to 350°f.
  • 2 spray a 9x13" cake pan with cooking spray.
  • 3 in a large bowl, stir together all crust ingredients.
  • 4 spread in the cake pan.
  • 5 in a small bowl, beat together the milk, eggs and vanilla.
  • 6 fold in 1 cup of coconut and the pecans.
  • 7 spread evenly over the crust.
  • 8 sprinkle the rest of the coconut over the filling.
  • 9 bake for 30-40 minutes or until golden brown.
