Creole Lamb Chop Packets

Total Time: 30 mins Preparation Time: 10 mins Cook Time: 20 mins

Ingredients

  • Servings: 4
  • 4 boneless lamb chops (4 to 6 oz. each)
  • salt and pepper
  • 2 tablespoons light brown sugar
  • 2 1/2 teaspoons creole seasoning
  • 2 (14 1/2 ounce) cans diced tomatoes with green peppers, onions and celery, drained
  • 2 (14 1/2 ounce) cans cut green beans, drained

Recipe

  • 1 preaheat oven to 450°f or grill to medium-high.
  • 2 lay out 4 pieces of aluminum foil, shiny side down. each piece should measure 12x18 inches.
  • 3 center one lamb chop on each sheet of foil.
  • 4 sprinkle lamb chops with salt and pepper.
  • 5 combine brown sugar and creole seasoning; rub mixture all over lamb chops.
  • 6 spoon tomatoes and green beans beside lamb chops.
  • 7 bring up foil sides. double fold top and ends to seal packet, leaving room for heat circulation inside. repeat to make two packets.
  • 8 bake 18 to 20 minutes on a cookie sheet in oven or grill 12 to 14 minutes in covered grill until lamb chops are no longer pink in center.
  • 9 serving suggestion: serve with hot cooked rice, if desired.
