Creole Lamb Chop Packets

Ingredients
- Servings: 4
- 4 boneless lamb chops (4 to 6 oz. each)
- salt and pepper
- 2 tablespoons light brown sugar
- 2 1/2 teaspoons creole seasoning
- 2 (14 1/2 ounce) cans diced tomatoes with green peppers, onions and celery, drained
- 2 (14 1/2 ounce) cans cut green beans, drained
Recipe
- 1 preaheat oven to 450°f or grill to medium-high.
- 2 lay out 4 pieces of aluminum foil, shiny side down. each piece should measure 12x18 inches.
- 3 center one lamb chop on each sheet of foil.
- 4 sprinkle lamb chops with salt and pepper.
- 5 combine brown sugar and creole seasoning; rub mixture all over lamb chops.
- 6 spoon tomatoes and green beans beside lamb chops.
- 7 bring up foil sides. double fold top and ends to seal packet, leaving room for heat circulation inside. repeat to make two packets.
- 8 bake 18 to 20 minutes on a cookie sheet in oven or grill 12 to 14 minutes in covered grill until lamb chops are no longer pink in center.
- 9 serving suggestion: serve with hot cooked rice, if desired.
