Banana-chocolate Chip Cookies

Ingredients
- 1/2 cup butter, softened
- 1/2 cup unsweetened applesauce or 1/2 cup prune puree
- 1 cup raw sugar (turbinado)
- 3 medium ripe bananas, mashed
- 2 large eggs
- 1 teaspoon pure vanilla extract
- 2 1/2 cups unbleached all-purpose flour
- 1 1/2 teaspoons baking soda
- 2 cups quick-cooking oats
- 1 cup semi-sweet chocolate chips
Recipe
- 1 preheat oven to 350°f.
- 2 coat 2 baking sheets with cooking spray.
- 3 in mixing bowl, combine butter and applesauce, beating with an electric mixer until creamy.
- 4 add sugar, bananas, eggs and vanilla, beating until smooth.
- 5 gradually add flour and baking soda.
- 6 stir in oats and chocolate chips.
- 7 drop teaspoonfuls onto baking sheets.
- 8 bake 7-10 minutes or until golden brown.
- 9 cool on a wire rack.
