Cognac Chocolat Bouchee (chocolate Bite)

Ingredients

- 3 1/2 tablespoons cocoa powder
- 1 1/4 cups all-purpose flour
- 1/4 teaspoon salt
- 1/4 teaspoon cinnamon
- 10 tablespoons butter
- 3 tablespoons corn oil
- 5 ounces unsweetened chocolate, chopped
- 2 cups light brown sugar
- 3 eggs
- 1 egg yolk
- 9 ounces chopped semisweet chocolate
- 6 ounces corn oil
- 1 tablespoon cognac
Recipe
- 1 preheat oven to 350°f
- 2 butter and flour 9-inch square pan.
- 3 sift together cocoa, flour, salt and cinnamon.
- 4 melt butter, corn oil, and chocolate over a double boiler. place melted chocolate mixture in a mixing bowl. allow to cool for 5 minutes.
- 5 add brown sugar and beat well. add eggs slowly. add cognac. slowly add dry ingredients, mixing until incorporated.
- 6 pour into prepared pan. bake for 20-30 minutes.
- 7 let brownies cool and cut into desired shapes.
- 8 glaze:.
- 9 melt chocolate, corn oil and cognac over a double boiler.
- 10 place brownies on cake rack over pan to catch drippings. pour warm glaze over to coat.
- 11 chill until glaze sets.
- 12 refrigerate any remaining glaze in a covered bowl.
