Cookie Dough Hamantashen (parve)

Total Time: 52 mins Preparation Time: 45 mins Cook Time: 7 mins

Ingredients

  • Servings: 40
  • 4 eggs
  • 1 cup oil
  • 1 1/4 cups sugar
  • 2 teaspoons vanilla
  • 3 teaspoons baking powder
  • 1/2 teaspoon salt
  • 5 1/2 cups flour

Recipe

  • 1 beat eggs well.
  • 2 add oil and sugar, beating well.
  • 3 beat in vanilla, baking powder, and salt.
  • 4 gradually add flour.
  • 5 chill dough. may be chilled overnight but let it sit out a while so it is not so cold - the dough will be easier to work with (i didn't include chill time in the preparation time).
  • 6 roll dough onto floured board.
  • 7 cut into 3 inch rounds.
  • 8 place a heaping teaspoonful of filling.
  • 9 i used solo poppyseed filling, solo apricot filling, seedless raspberry preserves, and chocolate chips - they were all yummy.
  • 10 take a little water and wet the outside area of the circle.
  • 11 draw up sides to form a triangle and pinch closed.
  • 12 place on parchment lined cookie sheets.
  • 13 bake at 350 degrees for 7-10 minutes or until brown.
