Carrot Cookies With Orange Icing

Ingredients

• 1 cup shortening
• 3/4 cup sugar
• 1 cup carrot, cooked and mashed
• 1 egg
• 2 teaspoons vanilla
• 2 teaspoons baking powder
• 1/2 teaspoon salt
• 2 cups flour
• 1/2 orange, juice of
• 1 orange, rind of
• 1 tablespoon butter
• 1 cup icing sugar

Recipe

• 1 cream shortening and sugar until fluffy.
• 2 add carrots, egg, vanilla. mix well.
• 3 sift together flour, baking powder, salt. add to carrot mixture, mix well.
• 4 drop by rounded tablespoon onto ungreased baking sheet.
• 5 bake 16 minutes at 350°f.
• 6 icing:.
• 7 mix together orange juice, orange rind, butter, icing sugar.
• 8 spread on warm cookies.
