Chocolate-ginger Cookies

Ingredients
- 3/4 cup butter or 3/4 cup margarine
- 1 cup sugar
- 3 tablespoons sugar
- 1 large egg
- 1/4 cup light molasses
- 2 1/4 cups all-purpose flour
- 1/4 cup unsweetened cocoa
- 1 1/2 teaspoons baking soda
- 2 -4 teaspoons ground ginger
- 1/4 teaspoon salt
Recipe
- 1 in a mixing bowl, using an electric mixer, cream the butter.
- 2 gradually add in 1 cup of sugar and beat until light and fluffy.
- 3 add in the egg; beat well.
- 4 stir in the molasses, flour, cocoa, baking soda, ginger and salt by hand; mix well.
- 5 cover and refrigerate dough for 30 minutes.
- 6 place remaining sugar on a plate.
- 7 shape dough into 1-inch balls; roll balls in sugar and place 2-inches apart on a ungreased cookie sheet.
- 8 bake in a 350° oven for about 12 minutes or until light brown; transfer to a wire rack to cool.
