Chocolate-ginger Cookies

Total Time: 42 mins Preparation Time: 30 mins Cook Time: 12 mins

Ingredients

  • 3/4 cup butter or 3/4 cup margarine
  • 1 cup sugar
  • 3 tablespoons sugar
  • 1 large egg
  • 1/4 cup light molasses
  • 2 1/4 cups all-purpose flour
  • 1/4 cup unsweetened cocoa
  • 1 1/2 teaspoons baking soda
  • 2 -4 teaspoons ground ginger
  • 1/4 teaspoon salt

Recipe

  • 1 in a mixing bowl, using an electric mixer, cream the butter.
  • 2 gradually add in 1 cup of sugar and beat until light and fluffy.
  • 3 add in the egg; beat well.
  • 4 stir in the molasses, flour, cocoa, baking soda, ginger and salt by hand; mix well.
  • 5 cover and refrigerate dough for 30 minutes.
  • 6 place remaining sugar on a plate.
  • 7 shape dough into 1-inch balls; roll balls in sugar and place 2-inches apart on a ungreased cookie sheet.
  • 8 bake in a 350° oven for about 12 minutes or until light brown; transfer to a wire rack to cool.
