Christmas Tree Cookies

Ingredients

• 1 1/2 cups unsalted butter
• 1 1/4 cups sugar
• 1 teaspoon lemon extract or 1 teaspoon lemon zest
• 2 large eggs, slightly beaten
• 4 cups flour

Recipe

• 1 allow butter to soften in large bowl. add sugar and lemon zest, and cream until light and fluffy. add eggs and mix well. stir in flour gradually, mixing well after each addition.
• 2 chill dough for 30-60 minutes before rolling out. cut into desired shapes, and place on ungreased cookie sheets. bake in pre-heated 350 degree oven for 8-10 minutes.
• 3 cool on rack. cookies can be frosted after they are completely cool.
